Tortilla Taco Bowls
Another easy weeknight dinner that leans towards the healthy side! If you can turn your oven on, you can make this meal!
Ingredients
Flour Tortilla Shells
1 Packet Taco Seasoning Mix
1 lb. Ground Turkey (You can use any ground meat)
2 tsp. Cumin
2 tsp. Paprika
2 TBSP Vegetable Oil
S&P
1 Lime
1 Box Black Beans & Rice (Pick your brand!)
1/4 Large Onion
1 TBSP Tomato Sauce
1.) Preheat oven to 425 F. Make foil balls to the size of your tortillas. On a baking sheet bend your tortilla over the foil balls.
2.) In a small bowl mix together oil, cumin, salt, pepper and paprika. Brush mixture over tortillas. Put them into the oven at 425 F to crisp.
3.) In a skillet on medium heat, brown your ground meat and season with salt and pepper. Add in the seasoning packet and finish cooking.
4.) Follow instructions on your rice and beans package and cook those separately.
5.) When your tortillas are crisp (about 10-20 minutes) take them out and let them cool.
6.) Mince your onion and serve raw, or saute in a pan. Stir in tablespoon of tomato sauce to meat mixture.
7.) Add your beans and rice to the bottom of your bowl. Top with meat and onion. Squeeze lime slice over top.
