Couscous Stuffed Pepper with BBQ Chicken Filling
Ingredients
4 Green Peppers
1 c. Couscous
S&P
2 Chicken Breasts
BBQ Sauce
2 tsp. Liquid Smoke
1 tsp. Garlic
1/2 Sweet Vidalia Onion
3 TBSP Tomato Sauce
2 Medium Tomatoes
6 Slices Bacon
1.) In a small sauce pan being heating your water to cook the cous cous. Once the water is heated, add your couscous and cook along with your instructions.
2.) In a large skillet drizzled with Olive Oil begin heating to medium. Meanwhile finely dice your onion and slice your tomatoes into dices. Add those to your pan and let cook down with the garlic.
3.) In another pan, take your chicken and begin to saute it. Baste with BBQ sauce & Liquid Smoke mixture while it cooks to keep it moist.
4.) When your couscous is done cooking, take it off the heat and set aside.
5.) Slice your bacon small and add it to the pan with the onion and tomatoes to begin rendering. Salt and pepper.
6.) Once the bacon is rendered out, stir in your couscous to the vegetables and add the tomato sauce.
7.) Take your chicken and slice into small pieces. Mix in with your pepper filling.
8.) Prepare your green peppers by cutting the tops off and cleaning out the inside. Do not cut off the bottom! In a pan heat some olive oil. Add your peppers and rotate them on different sides to let them blister and cook through.
9.) Fill with your stuffing and enjoy!
The chicken was deliciously cooked and the flavor was excellent.
