Oatmeal Zucchini Cookies

Don't freak out just yet! It might seem weird seeing a bit of green in your cookies, but the zucchini adds some great moisture and will take on the flavor of whatever you mix it with.




Ingredients
1 1/2 c. Grated Zucchini
1 c. Oats
1 Egg
1 1/2 c. Flour
2 tsp. Vanilla Extract
1/2 c. Butter
1/4 tsp. Baking Powder
1/2 tsp. Baking Soda
1/3 c. Brown Sugar
1 tsp. Cinnamon
1/2 c. Sugar

1.) Preheat oven to 350F. Cream together butter, sugar, brown sugar, egg, vanilla, and salt.


2.) Add oats, flour, baking powder, baking soda, and cinnamon. Fold in grated zucchini.



3.) Line a baking sheet with parchment paper. Scoop a spoonful of the batter onto the baking sheet. Repeat until the baking sheet is full!

4.) Into the oven at 350F for 11-13 minutes. 11 minutes was PERFECT for my oven and baking sheet.



5.) When you take the cookies out of the oven they will look pretty cake-like. They will set up more like cookies the longer they sit.
