Coconut Funnel Cake

It's fried.. what more can I say? I chose to infuse my funnel cake with the coconut flavor which added an AMAZING sweetness to the funnel cake. Who says you have to leave the comforts of home for some fair food favorites? This recipe is fool proof!




Ingredients
2 c. Pancake Mix
1 1/3 c. Milk
1 tsp. Vanilla
2 Handfuls of Shredded Coconut
Pinch of Salt
1 c. Sugar

1.) Mix pancake mix, milk, vanilla, salt and sugar together in a bowl. In a medium skillet heat it with vegetable oil on medium.




2.) Stir in coconut to the batter. When your oil is hot, fill a pastry bag with your batter (if you don't have a pastry bag, no problem! Just take a gallon size plastic bag and fill it with the batter. It'll work the same way.).

3.) Snip the corner of your pastry bag and squeeze some into your hot oil.


4.) Let it cook for 1-2 minutes per side.

5.) Set on a plate lined with paper towels to collect the excess oil. The funnel cakes will crisp up as they set and the oil comes out.


Enjoy with powdered sugar on top, fresh fruit or whatever you'd like!
