Oven Roasted Summer Vegetables with Garlic & Parmesan

This is a great, fresh summer side dish to compliment any meal you decide to prepare. In the summer we don't really seek comfort food like we do in the winter because it's so dang hot! Because of that we usually cop out and use chips or canned beans as a side dish. Neither of which compare in flavor to these veggies. Plus! these are so much better for you. I hope you enjoy!


Ingredients:
4 Cloves of Garlic Minced
2 c. each of Tomatoes, Zucchini, & Yellow Squash (You can eye ball this, and whenever you think it's enough you can stop adding vegetables)
S&P
3 TBSP Olive Oil
1/2 c. Parmesan Cheese
Juice of 1/2 a Lemon
1/2 c. Breadcrumbs

Spice Blend:
2 TBSP Dried Parsley
1 1/4 tsp. Italian Seasoning
1/4 tsp. Black Pepper
1 tsp. Paprika

1.) Preheat oven to 400F & line a large baking sheet with parchment paper, or grease with cooking spray.

2.) Chop all of your vegetables how you would like them. I would recommend doing it horizontally on the squashes so that you get nice circles, and then just leave the tomatoes in small chunks, but it is up to you!

3.) Lay the veggies on the sheet pan. Add garlic, S&P to taste, & olive oil and toss. Sprinkle the spice blend on top and toss again. Mix together the parmesan cheese and breadcrumbs. Lastly, add parmesan cheese mixture on top!



4.) Into the 400F oven for 25-30 minutes-- or until cheese starts to get golden brown!
