Breakfast Hash

Easy-Peasy-Lemon-Squeezy! I grew up eating this and I really enjoy it. Something neat about this dish, is that you can really fill your hash with whatever you want. There is the baseline of potatoes and eggs, but other than that it can be filled with whatever! I grew up accustomed to it being added to with a ham steak, onion, and cheese. Today, I make it with potatoes, garlic, turkey,eggs,  bacon, and yellow squash!


Ingredients:

Potatoes
Garlic
Bacon
S&P
Yellow Squash
Turkey
Eggs

1.) Cube your potatoes and set them in a bowl of water. This process helps get the starchyness off of the potato. Heat up your skillet (I made the whole dish in an electric skillet) and add your potatoes, seasoned with salt and pepper. Use butter or oil to grease your skillet.

I partially peeled my potatoes and left some of the skins on. It is really up to you!


Here is how I cube my potatoes, if you have trouble getting evenly cooked potatoes



2.) While your potatoes are cooking slice the rest of your ingredients. Add your garlic and yellow squash once your potatoes are almost cooked through.

3.) Begin rendering your bacon in a separate pan while your other ingredients cook together.

You want to cook your bacon on a medium heat, so that it doesn't get too crisp too fast. You want it to cook through slowly and evenly.


4.) Scramble your eggs and add your choice of seasoning (I used S&P, a little milk, and some italian seasoning). Add your eggs to the skillet with your potato mixture.


5.) Add your turkey and bacon to finish off the dish. Once everything is cooked through you are good to go!


It's a hardy American dish that is easy. Love love love! I made it for 4 adults (3 dudes & me) so I used 7 eggs and 7-ish potatoes as well. You can scale the recipe up or down to accommodate your amount of guests.
