Mixed Berry Muffins with Crumb Topping

This is definitely one of the best things I've made yet. For me, the lemon in the crumb topping is what makes it! It's another breakfast recipe, but it was too delicious not to share!


Ingredients:

Mixed Berries (Fresh of frozen, I used frozen because it's what I had on hand)
1 3/4 c. flour
1 c. sugar
2 tsp baking powder
1/4 tsp baking soda
3 eggs
1c. greek yogurt (I used a "mixed berry" flavored, use what you like)
1 1/4 tsp vanilla extract

Crumb Topping:
1 c. flour
2/3 c. sugar
zest of 1 lemon
juice of 1/2 lemon
7 TBSP of melted butter

1.) Preheat your oven to 350F and prepare your muffin pan by either greasing the wells, or placing muffins papers in there. If you grease your pan correctly, when you take the muffins out, they should just come right out, leaving nothing behind...


2.) Make your crumb topping by mixing together the ingredients! Set to the side.

3.) In a large bowl or stand up mixer combine eggs, sugar, vanilla and greek yogurt. Once combined add in your dry ingredients (everything else except the berries) until mixed. Be careful only to mix until the batter is smooth.

4.) Fill your muffin tins 3/4 of the way full of batter. Add your berries on top (as much or as little as you'd like), and then cover the berries with the crumb topping you set on the side earlier.

5.) Into the oven at 350F for 22 minutes, or until a toothpick comes out clean.


6.) Once out of the oven, remove from the muffin tin and let cool. Bon-Appetite! You can also freeze these guys once they cool! If you want to freeze them, wrap them individually and heat in the microwave when ready to eat for 30-45 seconds.
