Delicious Shortbread Thumbprint Cookies!

I never enjoyed these cookies growing up, but I saw a great recipe base on Pinterest so I thought I'd give it a try. I will be making these for Christmas. LOVE!

Ingredients:
2 c. Flour
2/3 c. Sugar
2 tsp. Almond Extract
1 c. Butter
1/3 c. Powdered Sugar
Jam or preserve of your choice

1.) Preheat oven to 350 F.

2.) Cream together white sugar and butter. Add in powdered sugar. Mix in almond extract. Slowly add in flour.

3.) Roll dough into tablespoon sized balls and lay on a cookie sheet. These will spread, so make sure they have enough room to do so.

4.) Press your thumb into the top of each cookie creating a slight "well" in the center. Spoon a small amount of jam into the center of each cookie.
*I know a lot of people who make these cookies regularly might wait to add the jam until the end. I tested the recipe both ways and prefer the jam added before the cooking process. It allows for a crisp caramelized cookie edge with a soft buttery middle.

5.) Bake at 350F for 13-17 minutes. (I baked mine at 15 minutes exactly & they were great!) Remove from baking sheet directly after cooking to a cooling rack. Let cool.
