Grapefruit Butter Cake: Delicious!
It would appear that citrus fruits are my calling! This cake is delicious even without a glaze, but you could make a basic confectioners sugar glaze, or just sprinkle confectioners sugar on top of it. Up to you! Enjoy!
Ingredients
1 c. Butter
2 1/3 c. White Sugar
1 tsp. Vanilla Extract
1/4 tsp. Almond Extract
1 tsp. Baking Soda
4 Eggs
3 1/3 c. Flour
Pinch of Salt
1 c. Buttermilk
1/2 c. Grapefruit
1.) Preheat oven to 325 F. In your mixing bowl, cream together room temperature butter and 2 cups of the white sugar.
2.) Add in the vanilla and almond extracts, eggs, baking soda, and salt, and mix together.
3.) Add in buttermilk, and 3 cups of flour.
4.) Once combined, take your grapefruit (peeled well, or you can use fruit cup grapefruit and drain the liquid out) and mash it gently with a fork. Add the grapefruit, and remaining 1/3 c. of sugar and flour to the batter and mix until combined.
5.) Pour into 2 9 inch, buttered, cake pans and bake for 20-30 minutes at 325 F.
6.) Let cool for a few minutes and then remove from pans and let cool on parchment paper.
